The Good News and the Bad News

Hi guys! Sorry I was M.I.A. yesterday… I pretty much had the WORST day anybody could ever have!! First, I was on my way to work and got into a car accident! It was a three-car accident and it ended in me getting a ticket and my car being towed :( It wasn’t really my fault, it was kind of an unavoidable situation, but the police have to give a ticket to the person whose “fault” it was so it’s fine. Luckily they spared me and gave me the cheapest ticket they could. I called Brent and had him drive me to work (I was an hour late, but they understood) and worked for six hours. While I was there, Brent texted me and I found out that because of the accident, some of my leftovers had spilled all over my computer and the hard drive crashed. Worst part is, the data is most likely completely gone. I know my mom is going to say “I told you so” for not having backed up my computer in so long… I lost a lot of pictures. But thankfully, I keep all my schoolwork on Google Docs, so I’m good there.

Here’s what I had for dinner the other night… Moo Goo Gai Pan from 500 Vegan Recipes. It was pretty yummy. Unfortunately, the recipe was on my old computer, but I think I remember it.

Moo Goo Gai Pan (adapted from 500 Vegan Recipes)

Ingredients:

  • 1/2 zucchini, diced
  • 1 cup chopped mushrooms
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup water chestnuts
  • 1 cup baby corn
  • 2 cups bean sprouts
  • 1 cup cooked rice
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup water
  • 2 tbsp cornstarch (mixed with 1/4 cup water to make a slurry)

Directions:

  • In a skillet, heat oil over medium heat. Add onions and garlic, stirring until onions are translucent.
  • Add mushrooms, zucchini, water chestnuts, baby corn, and bean sprouts, cooking until zucchini are tender and bean sprouts have reduced in size by about half
  • Add soy sauce, vinegar, and water, mixing until combined. Bring to a boil.
  • Stir in cornstarch slurry and remove from heat. Slowly stir until sauce has fully reduced. Serve over rice.

 

I also made Corn Chowder. It was really easy. Basically just cooked some onions, corn, and potatoes with some vegetable stock and boiled until the potatoes were tender. I also added some skim milk to make it creamy. Good news – it was delish. Bad news – If spilled on a computer, causes irreparable damage…

I also tried this weird Rice Cereal thing from the 500 Vegan Recipes. It was kind of weird. I wonder why somebody would choose to make a rice cereal for breakfast when oatmeal is so much better for you… I don’t know.

What was leftover after the accident I had for dinner with I got home from work. It was just as yummy as I had anticipated. Kind of upset that I lost of lot of it in the accident :(

Because I had such a HORRIBLE day, Brent surprised me with a present he was saving for our six-month anniversary (coming up on Tuesday). It’s okay because I already gave him his too, ha ha. And it was totally worth getting early – the garlic masher I’ve wanted forever!! Doesn’t it look so awesome?? And so much easier to clean than my standard garlic press. Can’t wait to try it out next week. Also, it was really cheap – only $15!
