Stir-Fry-In-A-Bag

Look what my awesome boyfriend got me for our 6-month anniversary!!! A really nice set of knives :) Isn’t he the best? He knows just what I like.

And, believe me, with a set like this you won’t see me cutting my fruits and veggies with a steak knife anymore. No way!

For lunch I had some leftover rice & veggie stir-fry… so yummy. All I had to do what add a little soy sauce, salt, and chili sauce and it was good to go.

Then I made some corn because I’d had it in my fridge for a while and had an ear of that as a side. The event of the first ear of corn I eat at the beginning of the summer is my FAVORITE. I know it’s not the healthiest, but corn is still one of my favorite veggies and I thoroughly enjoyed that little ear I ate yesterday in the 30 seconds flat it took me to devour the whole thing… mmm. Delicious memories.

I also cooked up some broccoli and green beans for sides to go with my meals this week. Yum yum vegetables. I went veggie crazy yesterday!

Speaking of veggie crazy… I tried and failed horribly making a veggie omelette. The veggie scrambled eggs it then became was good, but sadly not as good as the omelette I was expecting. But something awesome did come out of it…

Whenever I made some kind of a stir-fry or sauté, I usually always start with the same basic ingredients. Of course it was these ingredients that I intended to make an omelette with (because they’re my favorite). But then… genius hit! Why not chop up a whole bunch of those veggies I’m constantly using (with my fancy brand-new knives, of course!!), pop ‘em in a zip-lock bag, and shove them into the back of my freezer? Then… wha-lah!… just thaw and cook for an easy start to all of my favorite feel-good recipes :)

It’s also a good budget-saving trick because it will make sure that I use up all my veggies and not have to throw away ones that unavoidably go bad before I have a chance to use them.

My LOBAAT stir-fry-in-a-bag included: 1/2 onion, 1 tomato, 1/4 green bell pepper, and a few chopped mushrooms.

P.S. – I finished The Girl Who Kicked The Hornet’s Nest last night. It totally rocked!! Can’t believe I actually finished it in the seven days I had to read it. Go me!

6-month anniversary?! Dang girl, you have a niiiiice boyfriend! I got a rock band set for my 1-year haha
