Feed Your Inner Mexican

I’m not feeling so great today. This week was the first week since the beginning of January that I haven’t worked out five times! In fact… I only worked out twice. I’m really disappointed, but there were definitely some circumstances out of my control. My feet have been really bothering me, so that’s part of it. And I had a little bit of a cold, was on my period, and had a migraine. Not the the best of combinations! Hopefully this week will be better. I’m trying to focus on the positive. Working out twice is something right?? It’s way better than nothing!

Today I have to study for my two tests tomorrow, read 25 more pages of Robinson Crusoe, and take a quiz online. At some point I also want to make dinner and watch The Bachelor. We’ll see how that goes. I love joining in on Twitter (follow me!) during the Bachelor and reading all the posts about what a bitch Courtney is. But I’m probably just going to have to catch up on Hulu later this week and try to stay away from all the spoilers in my Twitter feed.

Yesterday I discovered the most amazing thing. Besides figuring out what that hanging closet organizer is really for. I came up with this delicious (and ridiculously simple) way to squelch a Mexican food craving without the high fat and calories! It’s so easy, I can’t believe I never thought of it before! To warn you, it looks kind of gross – but don’t worry, it tastes amazing.

Feed Your Inner Mexican (original)

Ingredients:

  • 1 can fat-free refried beans
  • 2 plum tomatoes
  • 1 avocado
  • Salt to taste

Directions:

  • Remove the refried beans from the can and heat in microwave for 3 minutes, stirring occasionally.
  • Meanwhile, finely dice the tomatoes and avocado.
  • Mix together beans, tomatoes, avocado, and salt… Enjoy!

 

I also tried this in a whole-wheat wrap, which tastes really good too! Either way is awesome.

Oooh, I love Mexican food! Especially refried beans! I actually made some homemade a few weeks ago! :-)
