Creamy Avocado Vinaigrette

I love making recipes that taste awesome, but are actually really healthy!

One of the biggest calorie-sucks is salad dressing. Store-bought salad dressings are usually filled with tons of calories, and there can be tons of unrecognizable ingredients.

Something I learned from living a healthy lifestyle is that I love to make my own salad dressing because (1) it usually tastes way better than anything from the store and (2) I can control exactly what goes into it.

Look at how delicious and creamy this dressing looks! It doesn’t contain any of those caloric ingredients that usually contribute to the creaminess of dressings.

Ever since I made it, I’ve used this dressing a ton – but one of my favorite salad combinations to use it with was:

  • Chopped romaine lettuce
  • Diced cherry tomatoes
  • Diced Jazz apple

Creamy Avocado Vinaigrette (adapted from Back to Her Roots’ recipe – check her out, she’s awesome!)

Ingredients:

  • 1 ripe avocado
  • 1/4 cup white wine vinegar (Cassie’s 1/2 cup was way too strong for me!)
  • Juice of one lemon
  • 1/2 tsp kosher salt
  • 1 cup extra virgin olive oil

Directions:

  • In a food processor, combine avocado, vinegar, lemon juice, salt and pepper. Run processor until the mixture becomes very smooth and creamy.
  • With processor running on low, stream in olive oil through the shoot until just combined.
