Cracker-Crusted Baked Tilapia

So yesterday I promised you a fish recipe… and today I’m going to deliver! I’m going to deliver real good.

Ever since Brent and I moved in together, I’ve been buying fish for us about once every other week. Before I started shopping for two, I’d never bought fish before! Kelly can vouch for me – I was a little nervous. I ended up asking her a bunch of fish questions on Twitter (are you following me?) before I went out and made my big first fish purchase. It was a little nerve racking… I had no idea what I was doing!

Well, that first little recipe came out amazing, and I’ve been going balls out ever since! The first few times I bought fish I stuck to salmon. It’s what I was used to, and I didn’t want to branch out of my fish comfort zone! But this week I finally decided to bite the bullet and try tilapia.

Now that I’m a fish connoisseur (yeah, right…) love buying fish for the two of us. It’s such a healthy alternative to meat! (We’re not vegetarians, but we try not to eat meat every night. Well… I sometimes cook vegetarian meals and Brent puts up with it ;) ). Fish is always a little more expensive, but every once in a while I can justify a splurge :)

And, oh my gosh, is it yummy!! I think I might even like tilapia more than salmon. But it’s a pretty close call…

Cracker-Crusted Baked Tilapia

(original recipe!)

Ingredients (serves two):

3/4lb tilapia, cut into two fillets

Salt and pepper

Cooking spray

2 tbsp unsalted butter, melted

10 whole-wheat saltines

Directions:

Preheat the oven to 350˚F.

Line a baking tray with foil and grease with cooking spray.

Generously season fillets with salt and pepper.

Place fish on baking tray.

Pour melted butter into a bowl. Crush saltines into fine crumbs and mix with butter.

Using your fingers, spread saltine mixture over fish until both fillets are covered.

Bake for 20 minutes.

Enjoy!

(Total calories in 1 fillet = 325)


Miranda’s Favorite Mashed Potatoes

(original recipe!)

Ingredients (serves two):

4 russet potatoes, peeled and chopped

Salt and pepper

Light Sour Cream

Directions:

Cook chopped potatoes in boiling water over medium-high heat for 15 minutes.

Drain potatoes and place in medium-sized bowl.

Mash with a fork or potato masher until no lumps remain.

Stir in 1/4 cup sour cream until creamy.

Season generously with salt and pepper.

Enjoy!

(Calories in 1/4 of the dish = 248)

(Hint: I love using sour cream instead of milk in mashed potatoes. For about the same amount of calories, you get a much thicker texture and a much more delicious flavor!)

Yum, that looks tasty!! Tilapia is definitely not as strong of a flavor as salmon, and I think it lends itself better to a “crusted” kind of recipe like this one.

Yeah, I definitely agree with you. Although for the salmon I sprinkled some panko crumbs over the top and it came out delicious (I’m going to post the recipe soon)!
