Low-Calorie Delicious Oatmeal

Today was my last EPAT appointment! Thank god. I’m so glad to be done with those painful electric shocks forever. Now it’s basically just a waiting game. I have a follow-up appointment with my doctor on August 1st, so until then I’m supposed to do a lot of stretching, take it easy, and hope that the pain slowly starts to disappear.

Like I explained a few days ago, it’s really important that this treatment works. If it doesn’t, I’ll have to make the decision to either (a) have a risky surgery that could basically put me in a wheelchair if it doesn’t work, or (b) continue living with the extreme amount of pain that I have now for the rest of my life.

I’d really appreciate everybody’s thoughts and prayers while I’m going through this!

After my appointment this afternoon, I stopped by Whole Foods to pick up a few things.

I’ve been dying for some oat flour and ground flaxseed forever, but hadn’t felt like shlepping all the way over to Whole Foods to get some until today. I used some of the flaxseed, so I transferred it into a baggie, but the original brand was Bob’s Red Mill Organic Whole Ground Flaxseed (just in case you were curious).

Flaxseed is a great source of Omega-3s and fiber! 2 tbsp gets you – 60 calories, 4.5g fat, 2400mg Omega-3s, 4g fiber, 3g protein.

Speaking of healthy things… I came up with the amazing oatmeal recipe I wanted to share with you. Since I’ve been counting my calories lately, I’d been wracking my brain trying to come up with an oatmeal recipe that’s healthy and actually tastes good instead of bland.

Low-Calorie Delicious Oatmeal

(original recipe)

Ingredients (serves one):

1/2 cup old-fashioned oats

3/4 cup milk

1 tbsp Shiloh Farms Organic Maple Sugar

1 tbsp Splenda Brown Sugar Blend

Directions:

Place oatmeal and milk in a pan over medium heat.

Cook until oatmeal has almost fully absorbed the milk.

Stir in maple sugar and brown sugar blend.

Enjoy!

It’s absolute deliciousness, that’s what it is. I can’t believe I ever lived before I found this stuff. I won it from a giveaway on one of my favorite blogs Say What You Need to Say and just recently thought to put it in my oatmeal. Not only is it super delicious… it’s only 30 calories per tbsp!
