Panko Crusted Salmon & Red Roasted Potatoes

Tuesday night I went with my mom to see Men In Black III. It was pretty good! I was worried that it was going to suck (c’mon… it’s number three), but I liked it. There were quite a few lines that had my mom and I cracking up. That being said, I probably wouldn’t want to see it again, and wouldn’t necessarily suggest going to see it in theaters (it’s a “wait for Netflix” kind of movie). But we still had fun!

I decided that movie night was going to be my splurge night, so I ate an entire sleeve of snack-size Almond Joys throughout the movie (640 calories total). I even had a glass of wine when I got home! Such a delicious night!

I was so good throughout the day that I didn’t even end up going over on my calories. That was a nice surprise :)

Before the movie, we went to Panera. Mom got her all-time favorite Strawberry Poppyseed Salad and I got a Chicken Cobb Avocado Salad with a turkey sandwich on the side.

I asked for my salad without the cheese and bacon, and I got the turkey on plain white bread with lettuce, tomato, and spicy mustard.

It ended up being a lot of food, but I ordered that much because last time I came I was starving after only having the salad.

Afterwards, I realized what had happened. Last time I went to Panera, I was only on day three of calorie counting… I was still in the “THIS IS HELL!” phase. Now that my body has adjusted and my stomach is a little smaller, the salad was totally perfect for me – sandwich not needed! Next time I’ll know :)

Yesterday morning I had my Low-Calorie Delicious Oats for breakfast and some blackberries for a snack.

Yesterday I spent a lot of time doing homework. All morning I thought it was Tuesday and then was shocked when I found out it was Wednesday! I had a bunch of homework for my summer classes due, so I had to finish all that up before Brent got home from work.

I don’t think I ever mentioned what classes I was taking this summer. Here’s the lineup!

It’s a lot of work.
I took a break for lunch around 2 pm and had a bowl of Spicy Mexican Soup (recipe coming soon!).

Brent got home from work around 7:45 pm, and dinner was a few minutes later. I cooked up one of my favorite new meals – Panko-Crusted Salmon with Dijon Mustard and a side of Miranda’s Red Roasted Potatoes. I’ve been dying to share this recipe with you!

The whole meal came to a total of 428 calories. How awesome is that?!

Panko-Crusted Salmon with Dijon Mustard

(original recipe)

Ingredients (serves two):

3/4lb salmon

3 tbsp Panko breadcrumbs

2-3 tbsp Dijon Mustard

Salt and pepper

Directions:

Preheat oven to 400˚F.

Cut salmon into two equally-sized fillets (if not already cut).

Generously season with salt and pepper.

Spread Dijon mustard over each salmon fillet evenly.

Sprinkle Panko crumbs on top of both pieces.

Line a baking sheet with foil and grease with cooking spray.

Place fillets side-by-side on the sheet.

Cook until the fish is light pink and flakes with a fork (about 15 minutes, depending on thickness).

Miranda’s Red Roasted Potatoes

(original recipe)

Ingredients (serves two):

4 medium red potatoes

1 tbsp olive oil

Salt and pepper

Onion powder

Cayenne Pepper

Directions:

Preheat oven to 400˚F.

Wash and scrub potatoes thoroughly under warm water (do not peel!).

Chop into bite-size pieces and place in a small bowl.

Pour olive oil over potatoes and stir with a spatula.

Sprinkle salt, pepper, and onion powder over potatoes generously; stir.

Add cayenne pepper to taste (I used about 1/4 tsp).

Spread potatoes out on a baking sheet lined with foil and greased with cooking spray.

Bake until you can spear easily with a fork (about 25 minutes).

I always end up taking pictures of my food in the strangest places too. I’d eat that huge salad… and want more. And that dinner is dynamite. I want those potatoes.

They’re soooo good. I make them all the time – they’re my boyfriend’s favorite :)
