[Man Healthy] Meatloaf & Superset Workout

Good afternoon everybody! Happy Friday :)

Now that it’s summer, the days of the week don’t really matter to me anymore. Since all of my summer classes are online, I have stuff due on most days at random times. The only day that I really like is Sunday because it’s the one day that Brent doesn’t have to work!

I’m really looking forward to this Sunday, because Brent has something special planned for us! I can’t wait to show you pictures :)

This year, we’re spending Father’s Day at Brent’s house in Wakefield together. I can’t wait for the grilled lobster tails his family is serving up!

This morning I had a big bowl of Low-Calorie Delicious Oats to start the day off right. Then, for a snack I had a bowl of strawberries.

 

Yesterday, I came up with this great Superset mini-workout that you can easily do in front of the television. I’m still sore! Obviously you don’t have to do the same sets/reps as I did – make it your own!

 

For lunch, I’m going to have last night’s leftovers – meatloaf, mashed potatoes, and mushrooms! I used my signature Mashed Potatoes recipe and just sautéed the mushrooms with a little canola oil and kosher salt.

 

Meatloaf

(original recipe)

Ingredients (serves four):

 1 lb ground beef/pork meatloaf mix

1 large egg

2 tbsp egg whites

1 cup oat flour

1 cup crushed tomatoes

1 tbsp Worcestershire sauce

Salt and pepper

Directions:

Preheat oven to 400˚F.

Combine all ingredients together in a medium-sized bowl.

Place in a loaf pan greased with cooking spray.

Bake until insides are crispy (not mushy) for about 1 hour.

Spread 2 tbsp of tomato sauce on the top of each piece.

(Calories per serving = 391.65)
