Spinach ‘n’ Eggs

 Woohoo! It’s Sunday, my favorite day of week :) Wanna know why? ‘Cause it’s Brent’s day off! Brent works Monday-Friday 2-7 and Saturdays 7-5, so it’s a relief when we get to spend all day together on Sunday. Usually he’s pretty exhausted from his week, so we just hang out together, enjoying each other’s company.

I woke up this morning and decided to have the same exact this for breakfast as yesterday! (minus the blackberries)

These are the healthiest eggs ever! I love having eggs for breakfast, but the problem is that they don’t keep me full for very long and they have a fairly significant amount of calories.

Usually I opt for my old standby, Low-Calorie Oats:

  • 1/2 cup whole wheat quick oats (I like the texture better than old-fashioned for some reason)
  • 3/4 cup milk
  • 1 tsp cinnamon
  • 1 tbsp Shiloh Farms Maple Sugar (my favorite thing ever!)
  • Pinch of kosher salt
  • 2 packets Splenda
 (That all adds up to 251 calories).

Mmmm! My tummy’s rumblin’ now just thinking about them :)  But this morning I had eggs.

 

Spinach ‘n’ Eggs
(original recipe)

 

Ingredients (serves one):
2 eggs
1 egg white
1 tbsp fat-free milk
1 1/2 cups spinach, chopped
Canola Oil
Salt and pepper

 

Directions:
Beat eggs, egg white, and milk together; add in salt and pepper.
Heat canola oil in a skillet over medium-high heat and add spinach.
Cook spinach until tender, add egg mixture.
Lower heat to medium and break up spinach evenly into eggs.
Stir eggs slowly for a couple of minutes until eggs are done.
Enjoy!

I got pretty hungry a little while later, so I snacked on a healthy serving of strawberries!

Zatarain’s butter & garlic rice

For lunch, I had the leftover serving of Zatarain’s Butter & Garlic Rice. It was tasty!

butternut squash mac ‘n’ cheese

For dinner tonight, I whipped up an old standby, Butternut Squash Mac ‘n’ Cheese. I think it’s his favorite meal that I make! It was just as yummy as last time :)

I found that using a blender worked better than mashing the butternut squash with a spoon (duh!), so I updated the recipe to reflect that good idea.

Today was pretty busy… I did a lot of homework to get ahead for my trip to NYC on Tuesday (so excited!). I don’t want to get stuck having to put a good time on hold to work on a project or finish up an essay. I just want to be able to fully enjoy my vacation.

hmm I need to look up the recipe for that carrot cupcake, it looks yummy!

They are sooo good! I’ll have one for a small treat when I’m craving something sweet. Totally does the trick :) And they don’t even taste like they’re “diet” muffins (that’s straight from the boyfriend’s mouth, so you know it’s true)!! ;)
